White crystal or crystalline powder, odorless, sweet and then bitter, sour taste. Melting point 150 ~ 152 ℃ (decomposition). Easily soluble in water (room temperature, 60g/100mL), slightly soluble in ethanol (1g/100mL), insoluble in ether. It is hydrolyzed into an equilibrium solution of gluconic acid and lactone in an aqueous solution. The pH value of the newly prepared 1% aqueous solution is 3.5, which becomes 2.5 after 2 hours. Oral LD50 of mice is 17.8g/kg, and ADI does not make special regulations (FAO/WHO, 1994).

1. As a stabilizer and coagulant, it can be used in soy products (tofu and bean curd), sausages (sausage), surimi products and grape juice, with a maximum dosage of 3.0g/kg; as a preservative, it can be used in fish and shrimp. To keep fresh, the maximum usage amount is 0.1g/kg, and the residual amount is 0.01mg/kg; it can also be used as a leavening agent to prepare compound baking powder, and it can be used in moderation according to production needs. 2. Used as the raw material of tofu coagulant, flavoring agent, pH lowering agent and leavening agent. In Japan, tofu coagulant accounts for 50%-70% of the total consumption in Japan. Using this product to make tofu has a pure texture, tender and delicious, and can prolong the storage time. The hygienic standard for the use of food additives in my country (GB2760-86) stipulates that the maximum use amount is 3.0g/kg. Gluconolactone is used in the milk industry to prevent the formation of milk stones, as a beer stone inhibitor in the brewing industry, added to toothpaste to help remove tartar, and also used in livestock meat, metal surface treatment agents, etc. 3. Used as protein coagulant, sour agent, leavening agent, preservative and production of cosmetics and toothpaste 4. Widely used as sour agent, leavening agent, protein coagulant, PH lowering agent, color retention agent, food preservative, etc. The resulting lactone tofu has a tender texture, no peculiar smell, no protein loss, and has antiseptic properties. It can also be used in cosmetics, textiles, papermaking, medicine, etc.
